For those who have acquired businesses in unfamiliar sectors, what learning curve challenges did you face and how did you overcome them?

This is dangerous territory. Every business has 'nuance' that can make the difference between success and failure. I suggest either partner up with someone who has industry experience, or expect and budget for a lot of costly errors.

Find anybody in the industry to share knowledge. A lot of PE firms use GLG and industry expert calls, which are expensive ($redacted/hr). Find owners in the space or executives and ask to pick their brain. You'd be surprised at how often it works.
You can even chat with a PE-guy who sits on the board of a company in the space.
