Any advise in acquiring restaurants?

Kind of worried about the main topics to consider in due diligence, as this kind of business relies heavily on staff (i.e. chefs and waiters) and it is possible that not even the current owners have complete knowledge of their strengths and weaknesses (for instance, what if they're stealing food?).

There is always theft from employees in any business. With restaurants, theft of food is so common that something is awry if no theft exists. In retail the corporate word for theft in inventory is "shrinkage."

I have acquired about 25 franchise locations as part of a family business. There are ways of figuring this out with SOP's that the existing restauranteur should have in place.
