Food wholesale/distribution industry

Does anyone have experience in the food industry selling to end customers (ie universities, hospitals, etc) through the diverse supplier programs offered by Compass, Aramark or Sodexo? I’m trying to understand how those programs work to determine risk of revenue volatility. Actively looking at acquisitions in the space and this topic came up as a potential risk.
